Help my berries are sweating..

Uh.. no…  they are not, chocolate does not sweat.. it can not sweat..

What you are really seeing is….

 condensation, just like a glass of ice water ends up with condensation on the outside of the glass, the same thing happens when a chilled chocolate covered strawberry comes in contact with air.

Whenever there is a difference between a surface temperature and air temperature condensation will form.  Just like it will form on the outside of a glass, it will form on a gallon of ice cream or a chocolate covered strawberry that has been previously kept chilled.

How do we know that chocolate can’t sweat?

Pretty simple: there is no water in chocolate, adding any water to melted chocolate will cause it to get clumpy and unusable.

The reason chocolate does not go bad quickly is because there is no water in it, so even if germs got on it those germs would not move around, there is no migration or movement of the chocolate once it’s set up.  Of course fillings or things wrapped in chocolate can go bad and strawberries themselves are very perishable so they should be chilled.

Chocolate can also act as a barrier that keeps liquids in, how often have you eaten a filled chocolate like a cream?  Or seen one of those little chocolate liqueur bottles?  The only time the liquid or semi liquid centers leak out is when the shell is cracked or melted. Of course you can dissolve chocolate with enough hot water.. but that is something else.

Does condensation ruin a chocolate covered strawberry?

Nope, you can’t even taste it. After all there is a lot of water in your mouth already. If you want to you can lightly wipe the strawberry off, but it really does not effect the taste.

How can I stop condensation?

Whenever there is a temperature difference between a chilled item and moisture containing air  it’s possible  (probable) that condensation will form.

So you’ll either have to remove the moisture from the air,  or make sure the strawberries are close to room temperature when they are exposed to the air. In very dry parts of the country, or times of year it’s just less noticeable.

While technically you can remove all the moisture from the air, that just is not an option in most cases.

A simpler way is to remove the temperature difference between your berries and the air. The only time this is really worth the effort is when you have made a lot of your own or have brought in a large amount for a party.

If you store the berries in a tightly packed sealed container, in a refrigerator, simply allow the package to come to room temperature before opening the sealed container.  Since there no difference between the berries temperature and the air temperature no condensation will form.

There is some liquid in the bottom of the candy cup what is it?

The following applies to berries you made yourself or ordered from us that were delivered on time. We can’t apply this to other peoples products because some of the other manufactures are saving on shipping costs by using risky planned 2 day delivery methods and/or making things up days ahead of time. We dip the same day we ship, so have a better idea of what the product condition should be upon delivery. We’ve seen some candy shops and grocery stores not refrigerate the strawberries at all, this is a dangerous practice as they also keep those strawberries in that case for days.

Back to answering the question about liquid in a candy cup: Again, it’s probably nothing to worry about, the first guess (since I can’t see it) would be condensation that had rolled down the surface of the dipped strawberry. The second guess is that as the chocolate set up it shrank slightly, a normal process, and that shrinking squeezed some moisture from the strawberry itself.  Generally if the liquid was squeezed out it will be thicker than water and very sugary sweet.  The thicker liquid does not need a crack to escape the strawberry because there is usually a  small section where the freshly dipped strawberry bottomed out on the tray, through the chocolate,  before it set up.

So…  we’ve written a lot about this, but as long as it’s a freshly dipped berry and it was delivered on time, you can ignore it. They will taste just fine, it’s just water and you are already 70% water.
